Excellent knife -- Shun does it againNov 14, 2009 Being an Alton Brown fan, having his little caricature on the blade is a nice touch, but cutting is what knives are really about, and this is one fine blade. Being high-carbon, non-stainless steel, it does require a little more care (hand washing and towel drying), but it sharpens to genuine razor levels. The unique feature is the angled blade, which really does put your wrist in a more natural position when working at cutting-board heights. I bought this for myself, but it would make a super gift.
Excellent knives!Oct 11, 2009 This is the fourth knife of the Alton's Angle KAI Shun knives I have purchased. They are excellent knives which hold an edge. I am sure the Pro and Pro2 series would be nicer, but they are much more expensive, so I decided to try this line. The craftsmanship is excellent and the design ensures comfortable use. These have the 16 degree two-sided double-bevel edge (as opposed to the single-bevel on the Pro and Pro2). My previous knives (Sabatier Cousine de France) which I have been using for over 20 years do not come close in sharpness and then Sabatier is no longer a French company, so I decided to go Japanese from Seki. Well worth the money. In the future I will probably get a Pro or Pro2 for those really intricate kitchen chores.

Alton's Angle for those with arthritisAug 05, 2007 The knife arrived long before expected or stated when purchased. It is a great pain free asset for a cook who has arthrits in tne hands. No longer does one hit one's knuckles on the chopping block!
